Spice-Rubbed Salmon with Spicy Cilantro-Lime Rice

The dry rub in this recipe has a nice, dry heat that pairs well with the light, bright flavor of this cilantro-lime rice. While the salmon in this recipe was roasted, we also highly recommend trying it grilled! The entire meal is quick, easy, and flavorful – a great end-of-summer meal!
