We’re celebrating the end of our Summer Reading Series (#SeafoodReads) with a delicious recipe from SSBP founder Jessie Johnson of Life As A Strawberry, featuring some beautiful sockeye salmon from our #SeafoodReads co-sponsor, Sitka Salmon Shares!

Sitka Salmon Shares
was one of our founding business partners, and they are a community supported fishery (CSF) program that connects Midwest consumers with sustainable, wild-caught Alaskan salmon. Based in Galesburg, IL, they serve select areas in Illinois, Wisconsin, Iowa, Michigan, Minnesota, and Indiana.

The dry rub in this recipe has a nice, dry heat that pairs well with the light, bright flavor of this cilantro-lime rice. While the salmon in this recipe was roasted, we also highly recommend trying it grilled! The entire meal is quick, easy, and flavorful – a great end-of-summer meal!
